Safflower was originally valued for the yellow and red dyes that its flowers yield. The red dyestuff was employed for centuries as a rouge ingredient and to color silks. Safflower"s textile-dyeing use may be very old indeed -ancient mummy wrappings apparently dyed with the flowers have come to light. In the 1700"s the Portuguese, it was said, added safflower to foods, probably as a saffron substitute. But safflower does not have the true saffron flavor-hence the names bastard saffron and false saffron.

Aside from its effectiveness in lowering cholesterol levels, safflower"s medicinal value is limited. Safflower has been used in the treatment of fevers and as a laxative.
